  • (1 cup maida,
  • 2 tbsp oil,
  • enough water to knead the maida,
  • salt to taste,
  • oil for deep frying)
  • 2 boiled potatoes, crumble,
  • 1/4 cup boiled peas,
  • 1/4 tsp grated ginger,
  • 1 tsp red chilli pwd,
  • 1/2 tsp coriander pwd,
  • pinch cumin pwd,
  • pinch kasuri methi,
  • dash of lemon juice,
  • pinch of garam masala,
  • chopped coriander leaves,
  • salt to taste,


Heat the oil in a pan. Add the cumin seeds. When the cumin seeds crackle, add the chopped chilies and garlic-ginger paste. Stir for a minute.Add the chopped potatoes and cook for 5 minutes covering the lid. Stir in between.Add the green peas, chopped spring onions and sweet corn kernels. Stir and cook for 5 minutes covering the lid.Add the salt, garam masala powder and lemon juice. Mix well and cook for 2-3 minutes .Let it cool down and then divide the stuffing into 12 equal portions. Keep aside. Make the glue with plain flour and water for sealing the vegetable samosa. Place the samosa pastry straight on a dry surface and fold a little bit from the nearest end. Hold in hand like a pocket and fill the vegetable fillings.Heat the oil in a pan and place the vegetable samosa one by one deep depends on the size of the pan.
